Salmon and smoked salmon from our own production

Salmon loins and fillets

In a careful, artisanal process, our fillets are rubbed with fine sea salt. They are aged for 48 hours to develop their full flavor. They are then lightly smoked in a cold smoke over beechwood, which gives them a distinctive flavor.
