Dry Aged Beef

The tradition of the „Schwarzbunte“ (Black Pied) cattle breed, which originated in Pomerania in the 16th century, demonstrates the deep-rooted quality and craftsmanship of this region. The careful selection of the highest-quality cattle and the skilled processing, based on the experience of numerous generations, are crucial for the intense flavor experience.

Dry-aging, in which the meat remains on the bone for up to six weeks, ensures that it gains in flavor and tenderness. The loss of approximately 20% of its weight during aging is a natural process that makes the meat even more aromatic. The skin retains the juices, resulting in a juicy and flavorful final product. After aging, the meat is trimmed and ready for gastronomy – a true delight for meat lovers!

Namibian beef – grass-fed cattle

Namibia is known worldwide for its excellent meat quality. Namibian cattle are born and raised on pasture, where they can graze stress-free. This gives them the opportunity to choose the natural, balanced diet they need for growth and development from calf to adult cattle. The meat from grass-fed cattle is of the highest quality and has a high content of omega-3 fatty acids, fatty acids and antioxidants such as vitamin E. The marbling of the meat gives it a richer, sweeter flavour with a juicy, tender texture.

The LANDURO PIG is a cross between the Duroc and the German Edelland pig. It originates from Thuringia. Landuro pigs are fed a purely plant-based diet with a high grain content and are raised on local farms.
 
The Landuro pig is characterised by fleshy shoulders, a muscular back and a well-formed chest. Its genetic trait of storing intramuscular fat in the muscle results in unparalleled meat quality. The soft fat lines in the meat ensure an exceptionally juicy taste, a characteristic otherwise only found in long-established pig breeds.
